CENTAF deployed locations have experienced several foodborne illness outbreaks. These preventable outbreaks have resulted in unnecessary illness and hospitalization. 2. Outbreaks have involved green salads which were not adequately soaked in a chlorine solution prior to serving. One involved the use of fresh eggs, purchased from an unapproved source. Additionally, the eggs were visibly contaminated with chicken feces and were undercooked. 3. I encourage Combat Support Element Commanders, Contracting Officers, Food Service Officers and Environmental Health Officers to ensure every effort is made to prevent unsanitary conditions in food activities. If not already in place, establish a food safety program that ensures food is purchased from approved sources and inspected upon delivery. Food service sanitation and foodhandler training programs must also be aggressive and thorough. The health and readiness of our people must be protected. [(b)(6)] CHARLES A.
