FIELD KITCHENS: (U) Field kitchens are located at "Tiger Beach"
USAF Tent City) and the flight line. The field kitchen at "Tiger Beach"
serves approximately 2,000 breakfast, 1,200 lunch, 2,300 dinner, and 700
midnight meals. The field kitchen at the flight line serves approximately
1,000 breakfast, 650 dinner, and 450 midnight meals. To prepare and serve
these meals, the field kitchens use a combination of food sources.
Approximately eighty percent of all food are B-Rations. B-Rations are canned
and dehydrated foods. The remaining percentage is A-Rations. A-Rations are
obtained from two local contractors: Arabian Supply and Architectural Company
and Saudi Catering and Contracting. A-Rations include fresh meat, poultry,
fruits, vegetables, beverages, and milk. Eighteen to twenty Third Country
Nationals (TCNs) work in the "Tiger Beach" field kitchen; there are no TCNs at
the flight line kitchen. The TCNs work for the Arabian Supply and
Architectural Company. No personnel security checks are conducted on these
TCNs by KFIA security, Host Government agencies, or the US military. Cursory
screening interviews of key personnel disclosed no derogatory information.
TCNs are given pre-employment and routine follow-up medical examinations, to
include chest X-Rays, urine tests, and stool tests. The majority of the TCNs
are Indian. They normally perform janitorial duties, but in some cases,
prepare beverages, ice, salads, desserts, and food. The TCNs are supervised
          by military members.

CONTRACTOR OPERATED DINING FACILITIES (CODF): (U) Arabian
Supply and Architectural Contracting Company (ASACC) and Saudi Catering and
Contracting (SCC) operate CODFs on KFIA. The facility operated by ASACC
prepares and serves 750 breakfast, 500 lunch, and 2,000 dinner meals. All
food items are obtained from local markets or imported from Europe, the United
States, or Australia. Eighty TCNs from India, Sri Lanki and Bangladesh work
for ASACC. No personnel security checks have been completed by KFIA security,
Saudi Arabian security, or the US military; however, cursory interviews
disclosed no derogatory information. Pre-employment and follow-up medical
examinations are conducted. Food supplies are watched by a "trusted employee"
24-hours per day to deter pilferage. Health inspections of the ASACC CODF
          have been satisfactory.

         (U) The CODF operated by SCC serves about 550 breakfast, 1400 lunch, 1400
dinner, and 820 midnight meals to USAF and US Army personnel. All food-items
are obtained from local markets or SCC's warehouse in Al-Khobar. Eighty-nine
TCN employees from India, Sri Lanka, Bangladesh, and the Philippines are
supervised by a Canadian assistant manager. No personnel security checks have
been completed by KFIA security, Saudi Arabia, or the US military; however,
cursory interviews of key personnel disclosed no derogatory information. TCNs
are given pre-employment and follow-up medical examinations. Health
-inspections have generally resulted in a "Fair" rating.

/B-RATIONS: (U) MREs and B-Rations are stored in an
          compound within "Tiger Beach'` the compound is locked between 2200 - 0800;
however, there are no personnel on site during those hours. Stores of
B-Rations will feed USAF members for about 17 days MREs on hand will last
          about 10 days.
