         SUBJECT: Inspection of canned and flexible pouch foods

         1.   PURPOSE: To provide information to preventive medicine
         personnel on the inspection of canned and flexible pouch foods.

         2.   FACTS-.

              a.    Swelling and rupturing of T-Ration and MBE flexible
         pouch foods hag been reported during Operation Desert Shitld,

              b.    Swelling and rupturing is related to physicallahtmical
         and microbial changes that occur at high storage tompgratur*a,

         3.   DISCUSSION:

              a.    Preventive medicine personnel should ensure that unit
         food service personnel and unit field sanitation teams inspect
         canned and flexible package foods before use. When stored at
         high temperatures expansion and swelling of cans and flexible
         packages can occur. In some cases cans and packages may rupture.

              b.    Swelling is due to phygical/ohomical and microbial
         changes occurring at high storage temperatures. Cans and
         flexible packages found swollen or ruptured should not be used.
         Taste and odor changes will also occur in certain foods when cane
         and pouches are stored at very high temperatures. Further
         information on field storage of subsistence items is provided in
         FM 10-24 (Ration Distribution Operationm).
